I was lucky enough to spend a few days in Key West last month. It was an incredible time for a few reasons, lots of laughs, a healthy dose of vitamin D filled sunshine, a new place I could explore and lots of clean, healthy food. I have a few autoimmune diseases and one of the ways that I keep them is check is trying to follow something called the autoimmune protocol diet. In short, when I follow it, my healthy is second to none and when I don't my disease can flair. Normally I would have drooled over the key lime pies that were everywhere in Key West (maybe even had cheated and had a bite.) But I value my body and wellbeing more than that now, so as I cruised Route 1 (as a passenger of course:) I googled recipes for AIP Key Lime smoothies and this incredible gem popped up. If you like key lime, smoothies and nourishment, then this is the recipe for you! I switched it up a bit from the one I googled and it was just as tasty. So whether you need a pick me up, a new morning drink or just want to add the feeling of some sunshine to your life, give this fun, tasty and bright drink a try. It's not Key Lime pie, it's better:) xoxo Lucia AIP Key Lime Smoothie (If you're not AIP, suggestion to make it a KEY LIME PIE Smoothie added as well) For one serving, but can double and make two easily! INGREDIENTS: 1/2 cup coconut milk (I used reduced fat, full fat is probably tastier:) 1/4 avocado 1/2 cup ice 1 Lime (zest and juice as well) Optional: Sweetner of your choice (I would suggest honey and just use a dab) Combine the coconut milk, avocado, ice, lime and sweetener to blender of choice and mix until smooth and creamy. *(If you're not AIP, you could take a graham cracker or gluten free graham cracker and crumble it on top to give it more of that key lime pie feel - enjoy!) *
