Clean & Yummy Grain Free Bread

I have had autoimmune disease since I can remember, but I was only diagnosed in 2006 after a series of horrendous issues that those that struggle with autoimmune and chronic illness know about.  Needless to say that (combined with my journey out of an eating disorder) made learning to form a new relationship with food tricky, but along the way I have learned so much about new ways to cook and new ingredients to use that leave me feeling nourished and full!

One thing though I have learned to be true is that you don’t have to know about autoimmune to know that eating clean is good for you. #WholeThirty and #TomBrady can tell you all about the benefits of eating clean! It reduces inflammation, fights fatigue and of course helps with our waistlines as a side affect.
 
 So after hours of trying to make grain free sandwich bread, I finally came up with a nutrient dense and yummy recipe I just had to share!  This not only is tasty for your brain taste buds, but your body and brain will thank you as well!

Lucia's Italian AIP Sandwich Bread

Step 1 - Preheat oven to 350 degrees

Step 2 - Mix together:
  • 1 cup Cassava flour
  • 1/4 cup coconut flour
  • And about (1/2 teaspoon baking powder...I did a shake, but my guess would be 1/2. I'll measure for you next time.)
  • Two pinches salt (Sorry I didn't measure, but my guess is about 1/2 teaspoon.)

I don't like separate bowls (I'm into easy even on AIP) SO add into that same bowl:
  • 1/8 of a lemon juice
  • 3 tablespoons olive oil
  • About 1 to 1-1/2 cups water (Start with 1 cup and add 1/8 cup more at a time until dough is dough like and flour is absorbed. I used 1-1/4 cups of water for this one.)

Mix together and let sit for 5 minutes for water to absorb some. 

Step 3 - Line a casserole dish and put parchment paper down with some oil. I used this so I could spread the dough into a slightly longer and thinner form for sandwich bread!) Spread dough out to the shape you desire but like a loaf. It doesn't rise much, but if you want it for sandwich bread like me don't make it too high!

Then cover with:
  • A sprinkle of Italian herbs (that were AIP compliant)
  • ​(I also sprinkled with a little garlic salt and onion flakes... I would recommend this if you can tolerate.)

Step 4 - Put in oven for 45-50 minutes. It should be crispy on outside and pull like bread in the middle:)
